Isomalt sugar is a great sugar craft alternative that adds a whole new dimension to your cakes.
Isomalt comes from refined sugar beets, which you can get in three forms, crystals or granules and nibs. Isomalt Crystals are a reduced-calorie sweetener used to make hard candy, edible gems, pulled sugar and blown sugar, and you can also use them as a sugar substitute in baking. Isomalt Nibs are pre-cooked, pre-coloured isomalt that you can melt to create a free-standing showstopper sugar work.
To make isomalt for cakes, pop the nibs into a microwavable bowl and microwave them for no more than 30-second intervals at a time until bubbling. When melted, you can pour it into any silicone mould or onto a silicone baking sheet to create patterns and shapes. Allow the isomalt to cool before handling as it can stick to your skin and cause severe burns. Isomalt nibs resist crystallisation, don’t burn like sugar, and you can re-melt them to use again.
